Fudgy Black Bean Brownies
Nobody will ever know the secret ingredient in these delicious gluten and dairy-free brownies.

Ingredients
- 2 cans organic black beans
- 1 cup cashew or almond butter
- 1 cup real maple syrup
- 2 tsp pure vanilla extract
- 1/4 cup espresso or strong coffee*
- 2 tbs avocado oil
- 3/4 cup rice protein** (naked brand)
- 1/2 cup fair trade cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup vegan chocolate chips (enjoy life brand)
Instructions
- Preheat oven to 350.
- Combine beans, nut butter, maple syrup, oil, vanilla and coffee in a food processor till smooth.
- Next add in remaining ingredients, scraping down sides to make sure everything is mixed well.
- Pour batter into 9X13 glass pyrex pan lined with parchment paper and pour in the chocolate chips. Spread evenly while mixing in chocolate chips.
- Bake for 30-35 min or until toothpick comes out clean. Watch carefully so you don't over bake because they will become too dry and not fudgy.
Notes
*If you would like to replace the coffee you may use a plant-based milk such as cashew or oat.
**You can substitute the rice protein for gluten-free flour or almond flour, if desired.
This is a double batch, but feel free to reduce the recipe by half, if needed and use an 8X8 inch pan.
