Cashew cream can be made, thick, thin, savory, spicy or sweet, the uses are really limitless!
Maybe you’ve heard of it, maybe you’ve tried it? And maybe you have no idea what to do with it.
I’ve got three ways to get you started with the wonderful world of cashew cream.
But first, let’s nerd out for a minute about the cashew….
Health benefits: Cashew are rich in fiber and are a good source of healthy fats, copper, magnesium and manganese. Which are all important nutrients for energy production, brain health, bone healthy and immunity.
Next, soaking your cashews is essential……….
It makes a much creamier end result and is necessary to get the consistency necessary for a good creamy sauce.
It gets rid of the phytic acid that can actually prevent our bodies from absorbing important nutrients.
They are more easily digested.
So as you can see, please SOAK YOUR CASHEWS-none negotiable!
Place cashews in a large bowl, cover with water and soak overnight. In a hurry, simmer cashews in water for 20 minutes.
Drain your water and place cashews in a high powered blender. Add in about 2 cups water and salt, blend, stopping to scrape down sides. Blend until nice and creamy, you may decide to add more water a little at a time to get desired consistency.

Your cashew cream will last in the refrigerator for 4-5 days and or freeze up to 6 months.You may certainly half this recipe, but if you’ve got everything out you might as well make a big batch.
Alfredo sauce, YUM, good for you, NO! So here is an alternative, so you can have alfredo everyday if you want! Not judging!
In a saucepan, lightly saute garlic over medium heat for about a minute. Add in ¼ cup milk and remaining ingredients, whisk together. Cook for about 5 minutes, adding more milk if necessary to reach desired consistency. Taste if any additional seasoning needs to be added such as salt or garlic.

Make it a meal: With 1 lb of your favorite style pasta and roasted broccoli.
