Broccoli Rice Casserole

Broccoli Rice Casserole

The perfect Christmas side dish to compliment any main course.
Course Side Dish

Ingredients

  • 1 cup wild rice
  • 1 tsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 ½ tsp thyme*
  • 1 ½ tsp parsley*
  • ½ tsp salt
  • 1 tbsp avocado oil
  • ½ cup onion, chopped
  • 8 oz baby bella mushrooms
  • 2 cloves garlic
  • 2 cups broccoli**
  • ¼ cup white wine
  • 8 oz kitehill vegan cream cheese

Instructions

  • Make rice according to package directions, adding in the avocado oil and all the seasonings.
  • Heat a skillet on medium high heat, add avocado oil and onion, saute about 5 minutes.
  • Add in mushrooms, garlic, broccoli, salt and pepper then saute till broccoli is softened.
  • Pour in the wine and deglaze the pan, scraping all the brown bits.
  • Finally add in the cream cheese and stir until melted.
  • Combine the cream cheese mixture with the rice.
  • Can be served immediately or put into a casserole dish to warm in oven later.***°

Notes

*If using fresh double the amount.
**Can use fresh or frozen.
***To reheat place cold pyrex in oven, set temp to 350. Keep it covered and bake for 30 minutes.
