Peppermint Chocolate Brownies
These vegan and gluten free peppermint brownines are the perfect holiday treat.

Ingredients
- 2 cans organic black beans, drained and rinsed
- 1 cup cashew or almond butter
- 1 cup real maple syrup
- 2 tsp vanilla extract
- ¼ cup espresso or strong coffee
- 2 tbsp 2 tbs avocado oil
- ½ cup gluten free flour blend*
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp peppermint extract or 8 drops young living peppermint essential oil
- 1 cup vegan chocolate chips
- ¼ cup crushed organic candy canes
- ¼ cup vegan white chocolate, melted
Instructions
- Preheat oven to 350°
- Combine beans, nut butter, maple syrup, oil and coffee in food processor until smooth.
- Next add in all remaining ingredients, EXCEPT chocolate chips. candy canes and white chocolate. Process till well combined.
- Stir in your chocolate chips with a wooden spoon into a parchment lined 9x13 pyrex dish. Bake30-35 minutes, watching carefully not to overbake.
- Once brownies are cooled, drizzle white chocolate over and sprinkle with crushed peppermint.

*Can also use protein powder to give these an extra protein boost.
