Whole Roasted Cauliflower

Ingredients

Whole Roasted Cauliflower

  • 1 whole cauliflower
  • 1 tbsp avocado oil
  • 1-1/2 tsp smoked paprika
  • 1 tsp salt (realsalt)

Green Tahini Sauce

  • 1/4 cup parsley
  • 1/2 cup cilantro
  • 1-2 cloves garlic
  • 2 tbsp lemon (1 whole lemon+zest)
  • 1 tsp salt
  • 1/8 cup avocado oil
  • 2 tbs water

Instructions

Whole Roasted Cauliflower

  • Preheat oven 400. Carefully trim off leaves from stem, keeping cauliflower intact.
  • Place in cast iron skillet, rub or drizzle with oil. Sprinkle with salt and paprika, flipping over and getting the inside as well.
  • Cover with parchment paper and bake for 45 minutes. Then uncover and roast an additional 20 minutes till it has a little char on top. Serve with Green Tahini Sauce.

Green Tahini Sauce

  • Place cilantro and parsley into a small food processor. No need to measure just eyeball it.
  • Add garlic and salt then blend well.
  • Next add lemon juice, tahini, oil and water. Blend well and enjoy.

 I like using this mini food processor for all small jobs, like this tahini sauce.   So much easier than pulling out the big food processor.  

When it comes to salt my preference is REDMOND REAL SALT, it is full of minerals, much better for you than processed salt and it tastes AMAZING!
