Have you heard of overnight oats? This is a quick no cook method to making oats. Simply put, the oats are soaked in milk overnight (or at least 4 hours) absorbing the liquid and becoming soft enough eliminating the need to cook.
There are dozens of ways to make overnight oats. Below is one of my most favorite recipes. I hope you enjoy it!

Bananas Foster Overnight Oats
Plant-based overnight oats
- 1/2 cup Organic Old Fashioned Rolled Oats (Bob’s Redmill)
- 1/3 cup Almond, Cashew or Oat milk (Malk)
- 1/3 cup Coconut or Cashew plain yogurt
- 1 tsp Avocado oil or plant-based butter
- 2 tsp Chia Seeds or Flax Seeds
- 1/2 Banana
- 1/2 tsp Vanilla
- 1 tsp Maple Syrup or Honey
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1 tbs Toasted Walnuts
Heat oil over medium heat with a tsp with oil/butter and add sliced bananas, vanilla, and spices for about 2 minutes then add maple syrup/honey.
Cook until bananas are broken down and slightly mushy about 2-3 more minutes. Set aside while you make oat mixture.
Mix the oats, milk, yogurt and seeds together in a mason jar, then stir in banana mixture and top with toasted walnuts. Refrigerate overnight.
Can double, triple recipe to have breakfast ready for the week.
Can keep in fridge 3-4 days.
